THE story

Jhony grew up in Huancayo, in Peru’s fertile Mantaro River Valley, where his mother, Marcelina, founded the beloved Restaurant Amanda. From a young age, Jhony cooked by her side, mastering traditional recipes like Peruvian rotisserie chicken, ceviche, and lomo saltado, along with the sauces that give Peruvian cuisine its signature flair—Leche de Tigre, Red Aji Panca, and more.

Peruvian cooking is a true melting pot of influences—from the Inca and Andean roots of the region to the Spanish, African, Chinese (Chifa), and Japanese (Nikkei) traditions that arrived later. The result is a cuisine that’s colorful, soulful, and full of life.

After moving to Idaho, Jhony’s nostalgia for the food of his homeland inspired him to share these flavors with new friends in the Wood River Valley. What began as home-cooked meals for loved ones grew into a dream realized—Jhony’s Peruvian Cuisine, where everyone is invited to experience Peru’s warmth, spice, and spirit.
